I tried Wild Ramps for the first time this year and WOW! They're packed with flavor and super versatile. You can add them into almost any dish for a garlicy-onion flavor! A friend gave me a big bundle and I received a second bundle in my local CSA box, so I had a TON to work with, and decided making pesto would be fun! It's easy to store and a great gift to share with your neighbor ( : I googled a bunch of recipes and ended up combining them to create my own version!
Ingredients:
1.5 cups chopped Wild Ramps
1 cup chopped basil
1 clove fresh garlic
Juice of half a Lemon
1/3 cup toasted Pine Nuts (can substitute with Walnuts or add Pumpkin Seeds for extra protein!)
2-3 tbsp Virgin Olive Oil
1 tbsp Nutritional Yeast
Directions:
Place Pine Nuts in hot, dry skillet. Gently toast until lightly browned. (keep an eye on the stove because it's very easy to walk away and end up with burnt nuts, I say this because its what I did!!) Chop Wild Ramps and Basil, juice lemon. Add all ingredients to food processor and PRESTO!
