The recipe I am sharing with you today is for a Sesame Peanut Sauce, it tastes AMAZING on Zoodles but you can also use it on regular rice noodles. Super filling and loaded with healthy fats and protein while being low on carbs. You can mix in as many veggies and/or tofu if you'd like to amp up the nutritional content!

My CSA included this recipe from chef Adam Boyd in a previous box, and I made a couple adjustments based off what I had on hand and my personal preferences. It is VERY filling and pairs great with a little flatbread/naan or a green salad. The flavors will transport you to the beautiful mountains of northern Thailand!
It may be Spring, but this quarantine has me craving warm, hearty foods, and lots of SUGAR! I also signed up for a local bread baker's CSA, (Front Porch Baking Co.) which is AMAZING, but the thing about fresh bread is that it goes stale pretty fast, so I've been having fun getting creative with ways to use any extra bread I have ( : All that being said, this recipe hit all my requirements!
